Abstract:This project is an investigation of how different enzymes found in papaya, pineapple, contact lens cleaner, meat tenderizer, and laundry spot remover break down protein (gelatin). The pH of the enzymes was tested and the effect of temperature on the rate of protein breakdown was investigated.
