Abstract:I tested five sugars: icing sugar, blackstrap molasses, corn syrup, sugar twin, and granulated sugar (using the latter as my control) to observe their effect on yeast in bread. The height of the dough was observed throughout the bread making process. I also considered the difference in sweetness and texture.
