Manitoba Saskatoons: A new source of antioxidants

Abstract:Antioxidant activity of saskatoon berries was investigated with respect to variety, location and processing. Results showed variation in antioxidant activity, suggesting potential for further genetic improvement. Dehydration could be used to preserve berries without affecting antioxidants. New saskatoon products would provide opportunities for the agricultural industry, while benefiting consumer health.
