From A Brick to a Bread

Abstract:This project experimented the effectiveness of adding gluten to frost-damaged feed wheat flour, which by itself made a brick-like loaf of bread. Between 4-6 Tbsp gluten were added and found the more gluten added the higher the loaf was. There was no noticeable change after 6 Tbsp. Accomplishing this, I can find markets for some feed wheat while putting more money in farmers’ wallets.
