Fermentation is the method of food preservation that Kombucha tea uses. We wondered why bacteria such as the scoby (symbiotic colony of bacteria and yeast) could be safe and even beneficial for us to consume. We researched kombucha and fermented our own tea to discover its benefits and learn about the method.
