Abstract:The affect of the yeast concentration, sugar concentration, rising time and flour type on the bread density was studied. The results illustrate that the bread density is not dependent on the yeast concentration or the sugar concentration or the rising time. However the bread density is significantly affected by the gluten content of different types of flour.
